Nature has always had an answer to human needs; this is because plants, mushrooms, algae and insects have been and are still some of the alternatives from which natural coloring is obtained. Therefore, there is no doubt that plant pigments have accompanied human beings since time immemorial, being naturally obtained for various purposes.

But, what is a plant pigment?

A vegetable, for example, has a particular color due to the predominant substance in its pigmentation. Chlorophyll is the predominant component within the structure of vegetables, for this reason most plants have a green color or a variation of this tone.

Today, we have different types of coloring, and those regulated, authorized and approved come from vitamins and natural substances like chlorophyll, cochineal, annatto, and others, which do not represent any type of danger or threat to the life of individuals and their physical integrity.

The various types of additives used to naturally obtain a desired color can be both water-soluble and fat-soluble. Curcumin, for example, is a water-soluble plant pigment; an orange coloring that can be obtained through a fermentation technique. It is mainly used in some drinks, jams, and bakery products.

Among fat-soluble plant pigments, we have Chlorophyll, which is a green pigment extracted from plants; it is used in spirits, sweets, and candies. Also, we have Carotenoid, which is an orange pigment obtained from vegetables that have this color, such as carrots or some types of algae.

There is a wide range of plant pigments, or natural colorings, that are naturally obtained. These are currently used in different industries, such as food or pharmaceutical, to enhance color and make the final product more attractive.
